No reviews

A creamy, comforting baked ziti with no meat — just tender pasta, rich ricotta, melted mozzarella, and a cozy tomato sauce. Perfect for weeknights, gatherings, or whenever you need a no-stress baked pasta that always turns out delicious.

  • Total Time: 55 minutes
  • Yield: 6–8 servings 1x

Ingredients

Scale

1 lb (450g) ziti pasta

15 oz whole milk ricotta

3 cups shredded mozzarella (divided)

1/2 cup grated parmesan

24 oz tomato sauce (homemade or store-bought)

2 cloves garlic, minced

1 tablespoon olive oil

1 large egg (optional)

1 teaspoon dried oregano or Italian seasoning

Salt and black pepper to taste

Optional: fresh spinach (chopped)

Optional: sautéed mushrooms

Optional: roasted zucchini

Optional: red pepper flakes

Optional: pinch of nutmeg

Instructions

1. Bring a large pot of salted water to a boil. Cook ziti until just al dente, about 1 minute less than package directions. Drain, toss with a little olive oil, and set aside.

2. In a bowl, mix ricotta, egg (optional), parmesan, a pinch of salt, pepper, and dried oregano. Add a spoonful of sour cream if you want a smoother texture.

3. In a saucepan, warm tomato sauce with minced garlic and a bit of olive oil. Simmer 5–8 minutes. Taste and adjust seasoning.

4. Preheat oven to 375°F (190°C). Spread a thin layer of sauce on the bottom of a 9×13 baking dish.

5. Layer half the pasta, half the ricotta mixture, some mozzarella, and more sauce. Repeat layers: pasta → ricotta → sauce → mozzarella.

6. Cover with foil and bake 25 minutes. Remove foil and bake 10–15 minutes more until golden and bubbling.

7. Let the baked ziti rest 10 minutes before serving so the layers set and become creamy.

Notes

Undercook the pasta slightly — this prevents mushy baked ziti.

Taste the sauce before layering; some brands need salt or a pinch of sugar.

Letting the casserole rest after baking is key for clean slices.

Easily adaptable: add spinach, mushrooms, or roasted veggies.

To reheat, cover and warm at 350°F for 15–20 minutes.

Freezer-friendly: freeze baked or unbaked for up to 3 months.

Vegan option: use vegan ricotta, vegan mozzarella, and skip the egg.
