  • Total Time: 35 minutes
  • Yield: 6 danishes 1x

Ingredients

Scale

2 cups blueberries (fresh or frozen)

1/3 cup sugar

1 tbsp lemon juice

1 tbsp cornstarch + 1 tbsp water

1 tsp vanilla

8 oz cream cheese, softened

1/4 cup sugar

1 egg yolk

1 tsp vanilla

1 sheet puff pastry

1 egg + 1 tbsp water (egg wash)

Coarse sugar

1/2 cup powdered sugar

1–2 tbsp milk

1/2 tsp vanilla

Instructions

1. Cook blueberries, sugar, lemon, and slurry until thick, then let cool.

2. Mix cream cheese, sugar, yolk, and vanilla until smooth.

3. Roll puff pastry and cut into 6 rectangles; score and dock centers.

4. Add cream cheese and blueberry filling to each piece.

5. Brush edges with egg wash and sprinkle coarse sugar.

6. Bake at 400°F for 16–20 minutes until golden.

7. Cool slightly, then drizzle with vanilla glaze.

Notes

If the blueberry filling looks thin, cook it one extra minute.

Cold pastry rises better than warm pastry.

Frozen blueberries work perfectly; do not thaw them first.

Let the filling cool fully or the pastry will get soggy.
