  • Total Time: 3 hours 10 minutes
  • Yield: 4 servings 1x

Ingredients

Scale

1 packet unflavored gelatin (about 7 grams)

1 cup hot water (near boiling)

1 cup cold water

2 tablespoons fresh lemon juice

1 teaspoon lemon zest

1–2 teaspoons stevia or monk fruit sweetener

Optional: 1/2 teaspoon grated ginger

Optional: 1/4 teaspoon turmeric powder

Instructions

1. Add 1 packet of unflavored gelatin to 1/2 cup cold water and let it sit for 5 minutes to bloom.

2. Pour 1 cup hot water over the bloomed gelatin and stir until fully dissolved.

3. Add the remaining 1/2 cup cold water and stir well.

4. Mix in 2 tablespoons fresh lemon juice and 1 teaspoon lemon zest.

5. Add 1–2 teaspoons stevia or monk fruit sweetener and stir well.

6. Pour the mixture into small glass containers or ramekins.

7. Refrigerate for at least 3 to 4 hours, or until completely firm.

8. Serve cold, either in cubes or with a spoon.

Notes

Let the gelatin chill for at least 3 to 4 hours for the best texture.

If the texture feels too rubbery, reduce the gelatin slightly next time.

Add the lemon juice only after the gelatin has fully dissolved.

Store covered in the refrigerator for 4 to 5 days.

Freezing is not recommended because it can damage the texture.
