A bright, sweet-heat mango habanero sauce that blends ripe mango, warm aromatics, citrusy tang, and a slow-building heat — smooth, modern, and insanely versatile.

  • Total Time: 22 minutes
  • Yield: About 1 1/2 cups 1x

Ingredients

Scale

2 large ripe mangoes, diced

1–3 habanero peppers, seeds optional

1 small onion, diced

3 garlic cloves, smashed

1 tablespoon neutral oil

1/3 cup apple cider vinegar

2–3 tablespoons honey

Juice of 1 lime

1 teaspoon fine sea salt

1/2 teaspoon smoked paprika

1/4 teaspoon ground cumin (optional)

1/4–1/3 cup water (as needed)

Instructions

1. Heat oil and cook the onions and garlic until soft.

2. Add mango and habaneros; cook until the mango begins to soften.

3. Pour in vinegar, honey, lime, salt, paprika, cumin, and water.

4. Simmer 10–12 minutes until everything is tender.

5. Blend until the sauce is silky and smooth.

6. Taste and adjust heat, sweetness, or acidity as needed.

7. Let cool slightly before serving or bottling.

Notes

For milder heat, remove the seeds and membranes from the habaneros.

For a brighter finish, add a squeeze of lime before serving.

Store in the fridge up to 10 days or freeze up to 3 months.
