Ingredients

Scale

3 tablespoons extra virgin olive oil

4 garlic cloves, minced

1 can (28 oz) crushed tomatoes (San Marzano if possible)

1 teaspoon kosher salt

1/2 teaspoon red pepper flakes (optional)

5–6 fresh basil leaves, torn

1 teaspoon sugar or pinch of baking soda

Freshly ground black pepper

Instructions

1.

2. Heat the olive oil in a medium saucepan over medium heat until warm but not smoking.

3. Add the garlic and sauté for 60–90 seconds until fragrant and lightly golden.

4. Pour in the crushed tomatoes carefully and stir in salt, oregano, and red pepper flakes.

5. Bring to a simmer, then lower heat and let it bubble for 20–30 minutes, stirring occasionally.

6. Taste and adjust seasoning: add sugar or baking soda if too acidic.

7. Stir in the fresh basil during the last 5 minutes.

Notes

Use San Marzano tomatoes for the best flavor.

Add a parmesan rind while simmering for extra depth.

Simmer longer for a thicker sauce.
