A bright, quick, 30-minute Mediterranean shrimp skillet cooked with cherry tomatoes, garlic, olives, feta, and fresh basil. A one-pan dinner full of color and flavor.

  • Total Time: 22 minutes
  • Yield: 4 servings 1x

Ingredients

Scale

1 lb raw shrimp, peeled and deveined

2 cups cherry tomatoes

3 tablespoons olive oil

3–4 garlic cloves, minced

1/2 cup Kalamata olives, pitted

1 teaspoon red pepper flakes

1 lemon (zest + juice)

1/2 cup feta cheese, crumbled

Fresh basil leaves

Salt and black pepper

Instructions

1. Pat shrimp dry with paper towels. Season lightly with salt and pepper.

2. Heat olive oil in a cast-iron skillet over medium-high heat until shimmering.

3. Add shrimp in a single layer and sauté until barely pink, 60–90 seconds per side. Remove and set aside.

4. In the same skillet, add tomatoes, garlic, olives, and red pepper flakes. Cook until tomatoes start to burst.

5. Deglaze with lemon juice and scrape browned bits from the pan.

6. Reduce heat and simmer until the sauce becomes glossy, 2–3 minutes.

7. Return shrimp to the skillet and toss gently to coat.

8. Finish with feta and plenty of fresh basil. Serve warm.

Notes

Do not overcrowd the shrimp — they will steam instead of sear.

If sauce reduces too fast, add 2 tablespoons water.

Rinse olives if too salty.

Best served immediately; shrimp can turn rubbery if overcooked on reheating.

Pairs perfectly with couscous, lemon rice, or garlic bread.
