Ingredients
2 cups strawberry or raspberry juice
2 tablespoons unflavored gelatin
1/4 cup cold water
2 to 4 tablespoons sugar
1 teaspoon lemon juice
Fresh berries, optional
Mint leaves, optional
Instructions
1. Sprinkle the gelatin over the cold water and let it sit for 5 to 10 minutes until sponge-like and slightly rubbery.
2. Heat the fruit juice gently to 120–140°F (49–60°C). Do not boil.
3. Add the bloomed gelatin to the warm juice and stir slowly until fully dissolved.
4. Add the sugar and lemon juice, then taste and adjust if needed.
5. Pour the mixture into a mold.
6. Refrigerate for 4 to 6 hours, or until fully set.
7. Unmold carefully and serve chilled.
Notes
Blooming gelatin properly is essential for a smooth texture.
Never boil the mixture or the gelatin can weaken and set poorly.
Let the mixture cool for 5 to 8 minutes before pouring for a clearer finish.
If bubbles form on top, skim them before chilling.
Store covered in the refrigerator for up to 3 to 4 days.
