Ingredients
1. Romaine hearts
2. Cherry tomatoes
3. Red onion
4. Croutons
5. Shaved parmesan cheese
6. Olive oil
7. Lemon juice or red wine vinegar
8. Dijon mustard
9. Garlic
10. Salt
11. Black pepper
12. Optional protein (grilled chicken, shrimp, or chickpeas)
Instructions
1. Wash the romaine leaves gently and dry them completely using a salad spinner or clean towel.
2. Separate the leaves and cut or tear them into large, structured pieces.
3. Place the romaine in a large bowl and season lightly with salt and black pepper.
4. In a small bowl, whisk olive oil, lemon juice or vinegar, Dijon mustard, and grated garlic to create the dressing.
5. Drizzle a small amount of dressing over the leaves and toss gently to coat.
6. Add cherry tomatoes, red onion, croutons, and shaved parmesan.
7. If using protein, add it warm but not hot.
8. Toss once more gently and taste for seasoning.
9. Adjust salt or acid if needed and serve immediately.
Notes
Romaine must be completely dry before dressing or the salad will collapse.
Always add crunch elements at the end to preserve texture.
Dress lightly first, then build. Romaine hides under-seasoning more than other greens.
