Ingredients
3 tbsp olive oil
1 large yellow onion, diced
3 garlic cloves, minced
2 medium carrots, diced
2 celery stalks, diced
1 can (14 oz) crushed tomatoes
2 cans (15 oz) cannellini beans, rinsed
4 cups chicken or vegetable broth
1–2 sprigs rosemary
1 tsp dried thyme
½ tsp salt
½ tsp black pepper
1 Parmesan rind (optional)
2 cups chopped Tuscan kale
Juice of ½ lemon
Fresh Parmesan for serving
Instructions
1. Warm the olive oil until shimmering.
2. Sauté onion, carrot, and celery for 8–10 minutes.
3. Add garlic and herbs, cook until fragrant.
4. Stir in crushed tomatoes briefly.
5. Add cannellini beans and broth.
6. Simmer for 25–30 minutes.
7. Mash some beans to thicken the soup.
8. Add kale and let it wilt.
9. Finish with lemon juice and Parmesan.
Notes
Aromatics need 8–10 minutes for proper sweetness.
Use low-sodium broth to control seasoning.
A Parmesan rind deepens the broth as it simmers.
Add lemon off heat to preserve brightness.
Let the soup rest 10 minutes before serving — flavors settle.
