Ingredients
1 (12.5-ounce/354 g) can no-salt-added chicken breast, drained and pressed very dry
1 large egg, lightly beaten
1/3 cup (38 g) finely shredded part-skim mozzarella
3 tablespoons (15 g) finely grated Parmesan cheese
1 tablespoon (15 g) plain nonfat Greek yogurt
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon sweet or smoked paprika
1/8 teaspoon ground black pepper
Nonstick cooking spray
Instructions
1. Place the canned chicken in a fine-mesh strainer and press firmly with the back of a spoon. Transfer it to paper towels and blot again until the chicken separates into dry, fluffy flakes.
2. In a medium bowl, whisk the beaten egg with the Greek yogurt, garlic powder, onion powder, paprika, and black pepper until evenly combined.
3. Add the mozzarella and Parmesan. Stir until the cheese is coated with the egg mixture.
4. Add the drained chicken and work it into the cheese mixture with a fork, breaking apart any large compact pieces.
5. Chill the mixture for 10 minutes so it firms and becomes easier to shape.
6. For the air fryer, preheat to 390°F and lightly coat the basket with nonstick spray. For the oven, preheat to 425°F, line a rimmed baking sheet with parchment paper, and mist lightly with nonstick spray.
7. Divide the mixture into 12 portions using about 1 1/2 tablespoons for each nugget. Gently flatten each portion to about 1/2 inch thick.
8. Air fry for 6 minutes, turn carefully, then cook 4 to 6 minutes more. For the oven, bake for 8 minutes, turn the nuggets, then bake 6 to 8 minutes more.
9. Cook until the surface looks dry and lightly golden, the edges are firm, and the center reaches 165°F/74°C on an instant-read thermometer.
10. Let the nuggets rest for 3 minutes before serving so the cheese and egg can finish setting.
Notes
For bariatric needs, serve these nuggets only after your care team has cleared you for soft or regular-texture poultry, egg, and dairy.
The chicken must be pressed very dry. Extra moisture is the main reason the nuggets spread or fall apart.
Do not overcook just to get a darker crust. These bread-free nuggets may stay lighter than fried nuggets, and overcooking can make them dry.
For dipping, use only a small measured portion of plain Greek yogurt or another sauce approved by your program.
Nutrition is estimated per 3 nuggets. Exact values vary by brand, especially sodium and drained chicken weight.
Store leftovers in a sealed container in the refrigerator for 3 to 4 days. Reheat until the center reaches 165°F.
