Ingredients
1½ lb boneless, skinless chicken breast, cut into sticks
4 cups cold water
2 tbsp kosher salt
½ tsp sugar (optional)
1½ tsp kosher salt
1 tsp smoked paprika
½ tsp garlic powder
½ tsp onion powder
¼ tsp black pepper
½ cup all-purpose flour
½ tsp salt
1 large egg
1 tbsp milk
¾ cup panko breadcrumbs
1 tbsp neutral oil
2–3 tbsp neutral oil, for cooking
Instructions
1. Combine water, salt, and sugar in a bowl and brine chicken sticks for 10 minutes.
2. Remove chicken from brine, rinse briefly, and pat completely dry.
3. Mix salt, paprika, garlic powder, onion powder, and black pepper, then season chicken evenly.
4. Prepare breading stations: flour with salt, egg mixed with milk, and panko mixed with oil.
5. Coat chicken sticks in flour, dip in egg, then press into breadcrumbs.
6. Heat oil in a skillet over medium heat to about 350°F.
7. Cook chicken sticks in batches for 2½–3 minutes per side until golden.
8. Remove from pan and rest for 5 minutes before serving.
Notes
Uniform sizing is key for even cooking.
Do not overcrowd the pan or the coating will soften.
For best texture, pull chicken at 160°F and let carryover heat finish cooking.
